Welcome to the next edition of What’s For Dinner!

This week I’m sharing with you our much loved Crispy Roast Chook. We have made this recipe countless Sundays for as long as I can remember. It’s easy to throw together, requires minimum ingredients and feeds the entire family for at least two meals! It will leave you going back for more though as the chicken is super succulent with a crispy skin.

We always make a bone broth with the leftover chicken frame/bones to reduce waste. I then use the bone broth to add to meals for the next couple of weeks which is such a great way to save money on buying bone broth/stock.

You’ll find the step-by-step method for the roast chicken (including roast vegetables and gravy) as well as my 5-day meal plan and meal prep tips below too. Hope you have a lovely long weekend. This would be a perfect meal to share with friends and whānau to celebrate Matariki!
