With summer approaching here in New Zealand, I wanted to share with you my spin on a Kiwi classic. Smashed or “mushy” peas reminds me of the many pub meals we had when we lived in London, so I’ve also recreated my gut-friendly version. This recipe delivers all the flavour and is made with simple ingredients that I think will be a hit with all members of your family! Serve with a side salad or quick coleslaw - it’s such a great meal for any day of the week or a Sunday lunch.
I always aim to include fish at least twice a week into our family’s diet as it is an amazing source of iron (and protein) as well as omega-3 and DHA. My kids love anything that is crumbed but especially with tomato sauce, so I’ve also added my recommendations for my go-to store bought brands at the bottom of the recipe.
