With winter coming to an end here in New Zealand, I thought I’d sneak in one more cosy dish. This lasagne recipe is my spin on an absolute classic. This version is more nutritious than your regular lasagne as it is packed with veggies that are hidden away in the rich meat sauce. The cheese sauce packs more protein and iron than your traditional bechamel without compromising on any flavour. It is hearty and satisfying without being too heavy.
