LCM BUBBLE SLICE
for a sweet treat

I shared this recipe last night on my Instagram so am sharing it here too as I know you guys love having recipes in one place to refer back to!
Chewy, crunchy and just sweet enough, this is a super simple lunchbox slice that comes together in minutes and disappears even faster.
It’s one of those “mix, press, chill” recipes that are especially great for busy weeks - no oven, no fuss, just a really great snack to have on hand in the freezer.

LCM BUBBLE BARS
Makes: 16–20 squares
Prep time: 10 minutes
Chill time: 2 hours
Freezer friendly, can be lunchbox friendly & meal prep friendly
Ingredients
2.5 cups rice puffs
1/2 cup puffed quinoa (or use 1/2 cup rice puffs instead)
3 tbsp desiccated coconut
1/3 cup honey
1/4 cup coconut oil, melted
3 tbsp peanut butter/almond butter/hulled tahini/sunflower seed butter
1 tsp vanilla extract
Optional:
Natural sprinkles or a handful of choc chips
Method
Line a baking tin with baking paper.
In a small saucepan over low heat, melt together the honey, coconut oil and peanut butter/almond butter/tahini/sunflower seed butter until smooth and fully combined. Stir through the vanilla extract.
In a large bowl combine the rice puffs, puffed quinoa and desiccated coconut. Pour the honey mixture over the dry ingredients and mix well until everything is evenly coated. If you’re adding choc chips, add them now.
Transfer the mixture to a prepared tin and sprinkle with sprinkles. Press down really firmly or with another sheet of baking paper (this is key to it holding together!)
Pop in the freezer for 2 hours then slice into squares/rectangles.
Notes:
To make nut free, you can sub out the peanut butter/almond butter for sunflower seed butter or tahini to (it will change the flavour slightly).
If you’re packing into a lunchbox, pop the slice in straight from the freezer and encourage your little one to have it for morning tea (otherwise it will start to fall apart). I pack an ice brick too to keep the lunchbox cooler.
Storage
Store in an airtight container in the freezer for up to 2 months.
