Welcome back to What’s For Dinner!
This week I’m sharing one of the quickest meals in my repertoire and one that we have on regular rotation in our house. I think we all need these kind of meals up our sleeve, especially for those days when we just don’t feel like cooking or need to throw dinner together in 20 minutes but still want something nutritious. It’s saucy, requires very little chopping and the homemade stir fry sauce contains no nasties but is still packed with flavour.
This meal is super versatile - you could serve this stir fry with rice or noodles - we often switch between the two. You can also use whatever protein you have on hand or swap for other vegetables you already have in the fridge or freezer - such as green beans, corn or edamame beans for a little more protein. This recipe is family-friendly, so if you do like your stir-fry with more heat - I’d recommend adding chopped chilli or chilli flakes on top.
