Welcome to the first edition of What’s For Dinner!
Alright guys, we are kicking off the newsletter with an absolute bang. This beef brisket recipe is one I’ve been working on for some time now and it’s a real keeper. What I love about this recipe is not only how easy and versatile it is, but how it is also made with affordable, everyday ingredients. This would be suitable for babies (from 9-10 months old), toddlers and of course, adults.
I’ve found a new love for my slow cooker lately as the days are getting cooler as well as busier. So if you haven’t made an investment in one yet, I highly recommend you do! Pop this brisket in the slow cooker during the breakfast rush and by the time dinner rolls around, you’ll have dinner (mostly!) done. You could serve with creamy mashed potatoes, roasted vegetables/greens and coleslaw/salad. For a quick dinner you could just throw it into tacos! You could then make burgers with the leftovers the following night. This recipe is also a crowd pleaser - perfect for a potluck dinner or if you are hosting friends and family.
You’ll find my 5-day meal plan is at the bottom of the newsletter. I hope this provides you with some easy dinner ideas for the week ahead or even better, you can cook along with me too!
Happy cooking & I’ll see you here next week,
Di xx
