Welcome to the next edition of What’s For Dinner!

If you’re looking for a flavoursome curry in a hurry, then you’re in the right place! This Thai Red Curry is not only delicious, but it is balanced with protein, vegetables, healthy fats and is gut-friendly too. We love to serve it with coconut rice, which really gives it that takeaway (or fakeaway?) feel! The best thing about this recipe though, is that is comes together in just over 30 minutes and you don’t need to stand around the stove the whole time either.

We have this with chicken thighs, however you could substitute with tofu, chickpeas or even a white fish. With all the winter bugs going around at the moment, this is the perfect meal to nourish yourself and your family but it still feels a little naughty. This has been a real hit in our house, I hope you love it as much as we do!
