This weeks’ recipe

This weeks’ recipe is an absolute banger. It was inspired by some of my pantry staples that needed using, so I figured you may have some of these ingredients lying around your kitchen too! It’s somewhere between a Thai-inspired laksa and a noodle soup and honestly, it’s absolutely delicious. Full of protein and nourishing ingredients, it’s quick to throw together and a recipe the whole family will love. I already can’t wait to make this again and it was a big hit with the kids.

If you don’t have tofu, you could easily swap for chickpeas or a couple soft-boiled eggs. This meal is another under 30 minute meal and will curb any craving you might have for takeaways. Hope you love it as much as we did!

I also realised this week that it has been a whole year since I launched What’s For Dinner! Tuesday - Leftover Mexican Pulled Beef with tacos

Wednesday - Butter Chicken with rice and roasted cauliflower

Thursday - Greens Pesto Pasta


Prep time: 5 minutes

Cook time: 25 minutes

Serves: 4-5 (2 adults, 2-3 little ones)

Dairy Free, can be GF, egg free
