Welcome back to What’s For Dinner. I hope you all had a really lovely Christmas with your family and friends however you celebrate it! We hosted Christmas at home which was really special and we’ve headed away to the beach now (even though the weather is terrible here so far!!).
This weeks’ recipe is one I made for lunch the other day and we absolutely loved (even the kids!). It’s perfect for those “in between” nights between Christmas and New Year when you don’t know what day and just want something quick and delicious for dinner (or even lunch). If you are feeding a crowd, you could easily double this recipe. This pasta is great on its own or the perfect accompaniment alongside a BBQ or fresh fish. The mozzarella melts into the pasta and this dish will leave you wanting to go back for more, all while still being light and delicious.
