Welcome to the next edition of What’s For Dinner!
This week I’m sharing with you a classic family favourite. This Mac & Cheese recipe will leave you feeling satisfied and equally nourished. Whilst it has a similar look, taste, feel (and cheese pull) to your regular Mac & Cheese, this recipe packs a nutritional punch from seasonal vegetables and a gut-friendly ingredient that is hidden away in the sauce.
If you have a beige food lover in your family and are looking for a dish to add some more vegetables and nutrients, then this will be one you’ll want to try! It is a complete meal on it’s own or makes a great side. We love to have it with steak or my Beef Brisket alongside greens or a leafy salad. It also feeds a crowd, making it perfect for weekend get-togethers or just a quick leftover lunch!
You’ll find the step-by-step method for this recipe as well as my 5-day meal plan and meal prep tips below too.
Happy cooking and I’ll see you back here next Friday,
Di xx
