Hey everyone,

Welcome back to What’s For Dinner & hello to the new faces who have joined over the past week!

I wanted to start this weeks’ newsletter on a bit of a personal note. Quite a few of you have reached out as you noticed there wasn’t a newsletter last week - apologies for my lack of comms. I needed to take a take a step back from work as we said goodbye to my dad, who recently passed away. I’m easing back into things and appreciate your understanding and continued support for this newsletter - it was nice to hear you missed my weekly email! I’ll make it up with a bonus recipe at some point in the future.

This weeks’ recipe

I’ve been meaning to create a Pad Thai recipe for a loong time - one that is kid-friendly, but still hits the spot for parents too. This recipe gives that takeaway feel, but with a more nutritious take on it. It’s light, fresh and will leave you feeling great (instead of taking you on a blood sugar rollercoaster!).

This meal comes together in less than 30 minutes, is family-friendly and balanced with vege, protein, fibre and healthy fats. Let me know if you make it and what you think!!

Monday - Pad Thai

Tuesday - Winter Salad with steak/sausages

Wednesday - Creamy Chickpea Curry with roasted cauliflower

Thursday - Baked Pumpkin, Pea & Chicken Risotto


Prep time: 5 minutes

Cook time: 20-25 minutes

Serves: 4-5 (2 adults, 2-3 little ones)
