This weeks’ recipe

The weather is starting to slowly cool down here in Hawkes Bay, which means it’s the beginning of soup season! This minestrone is such a classic, wholesome and hearty recipe. My kids don’t usually love soup, except for the one’s where I add noodles or pasta..and since there is pasta in this recipe, it is *usually* a safe bet for my toddlers.

It is packed with flavour, gut-loving ingredients and can be enjoyed by the whole family. This soup comes together in just 3 simple steps, without a whole lot of effort. I love having leftovers the next day, making it an ideal at-home or work lunch.

Sunday - Minestrone Soup with crusty bread

Monday - Chilli Con Carne with steamed rice, avocado & sour cream

Tuesday - Pesto Sausage Tray Bake or leftover Chilli

Wednesday - Honey Soy Chicken Bowls

Thursday - Veggie Packed Lentil Bolognese
