There are some recipes that just work and you come back to again and again - and I have a feeling this might be one of those recipes. It’s the kind of slice that you can make with pantry staples and you can’t really go wrong with. This recipe was actually inspired by one of my OG slice recipes, however this one is more like the nostalgic Weet-Bix slice many of us grew up with - just a little more nourishing. It’s perfect for kids parties, after school snacks and even lunchboxes. I love how this version feels a little bit special - the icing is indulgent, the base is chewy and who doesn’t love some sprinkles to really seal to deal. Another one bowl wonder, that will be perfect for Easter too - you could even pop a few little eggs on top!

Sunday - Spaghetti & Meatballs with seasonal veg

Monday - Green Curry with coconut rice

Tuesday - Slow Cooked Beef Brisket with mashed potatoes, coleslaw & seasonal veg

Wednesday - leftover Slow Cooked Beef Brisket tacos with coleslaw, coriander & pickled onions

Thursday - Greens Pesto Pasta


Some meal prep ideas if you’re at home over the weekend and are spending some time in the kitchen on Sunday:

  • Baking: Sprinkle Slice

  • Lunch: Bacon & Egg Pie

  • Dinner: all the dinners this week are pretty quick to put together, however, you could cook the Slow Cooked Beef Brisket on Sunday to save you time during the week. When reheating over the stove, add a splash of bone broth if needed to loosen.


Prep time: 10 minutes

Cook time: 15-17 minutes

Makes: 25 small pieces

Lunchbox-friendly (nut-free), egg-free
