This weeks’ recipe

I can never go past a Thai Green Curry with coconut rice. I grew up going to a little Thai restaurant with my family and we always ordered a green curry. My version is packed with protein, veggies and has that nostalgic taste you’d except - although this version is mild so the kiddies can enjoy with us too. If you are making this for adults (or kids) who love a bit of spice, you can easily add more curry paste.

This is a delicious family friendly meal to add to your rotation which ticks all the nutritional boxes and will curb any craving for pricey takeaways as it’s soo easy to make and really satisfying!!

Monday - Creamy Tuscan Chicken Pasta

Tuesday - Simple Stir Fry with steamed rice

Wednesday - Loaded Nachos

Thursday - Tofu Satay Noodles
