This weeks’ recipe

If you are Italian, you may want to look away now.. as this recipe breaks the risotto rules. It’s not traditional, but when you’re a busy parent, 20 minutes of stirring at a stove is just not on the cards. Creamy, cosy and barely any stirring required, this baked risotto is your new weeknight hero. It’s family-friendly comfort food that is super nourishing. I hope you love it as much as we do. Pair with a fresh and crunchy green salad on the side - yum, yum, YUM!

Sunday - Pumpkin, Chicken & Pea Risotto

Monday - Veggie Packed Lentil Bolognese with pasta

Tuesday - Thai Red Curry with coconut rice

Wednesday - One Pot Beef Casserole with crusty bread

Thursday - Tofu Satay Noodles or leftover Lentil Bolognese


Prep time: 5-10 minutes

Cook time: 45 minutes

Serves: 4-5 (2 adults, 2-3 little ones)
