Welcome back to What’s For Dinner & hello to the new faces who have joined over the past week - I hope you love it here! If you haven’t checked out the 5 top recipes on What’s For Dinner this week, here they are below:

  1. Slow Cooked Beef Brisket

  2. Teriyaki Salmon Noodles

  3. Veggie Packed Lentil Bolognese

  4. Lasagne

  5. Creamy Tuscan Chicken Pasta

This weeks’ recipe

This beef vermicelli noodle recipe is a winner. It reminds me of this little hole in the wall Vietnamese place we always used to go to when we lived in Wellington, although my version is a lot more family friendly. It’s gluten and dairy free, packed with seasonal veggies, protein & rice noodles - that your kids are sure to love.

Ready in under 30 minutes, this recipe makes a great go-to for summer nights when you want something fast, fresh and tasty - that both parents and kids will approve of. Hope you love this one as much as we do!

The step-by-step method, my 5-day Meal Plan as well as the Grocery List are all included below.

Happy cooking & I’ll see you here next week!

Di xx
