This weeks’ recipe

This week’s recipe is a classic comfort dish which I first shared a few years ago and it is still one of my most popular recipes! It’s seen me through each stage of motherhood so far - pregnancy, postpartum, starting solids with my babies and now for family meals! This Dahl is full of flavour, freezes beautifully and is great for batch cooking. It ticks all the boxes nutritionally too - full of fibre, plants, iron, healthy fats and is easy on the gut. This will definitely be one to add to your dinner rotation, especially as it is a cost effective.

The recipe itself is quite hands off once you’ve prepped the ingredients. I often make this Dahl during the weekend and store it in the fridge for a quick ‘heat and eat’ midweek meal. You can serve it with roast potatoes (our favourite way to have it) or with rice or naan bread if you are short on time!
