The winter bugs moved into our house the last week. Sending strength to anyone in the depths of sickness, it can feel relentless during winter. So this week’s recipe is all about ease and comfort!
Osso Buco is a classic winter warmer — the kind of comforting, slow-cooked dish that feels like a warm hug. It’s perfect for these cooler nights or for a slow Sunday. My version uses beef shin (I get these from my local butcher), a humble cut that’s often overlooked. But when cooked low and slow, it transforms into something truly special - fall-apart meat that’s rich in flavour! The real magic comes from the bone-in cut though — it not only adds more flavour to the sauce, but it’s also packed with collagen - a key nutrient that supports healthy skin, joints, and gut health (and growing bodies too!).
Serve it spooned over creamy mashed potatoes or with your favourite pasta for a meal the whole family can enjoy. It's even soft enough for little ones just starting solids!
