This weeks’ recipe

This soba noodle stir-fry is a new fave in our house. It’s one of those dinners that ticks all the boxes - quick, tasty and packed with goodness. Soba noodles are a great addition to your pantry - they are not only cooked in minutes but are packed with plant-based protein, fibre and magnesium. This recipe is toddler friendly and one the parents will love too! Great as leftovers the next day (if you have any left!)

Sunday - Mexican Pulled Beef tacos

Monday - Soba Noodle Stir Fry

Tuesday - Leftover Mexican Pulled Beef rice bowls

Wednesday - Creamy Sausage & Spinach Pasta

Thursday - Dahl with roast potatoes
